Yes, 7:00 a.m. is definitely an odd time for a cocktail... but this is a wedding, after all! We are celebrating! (Plus it's Saturday so you can probably take an afternoon nap.)
I wanted a drink that was both English, and celebratory. I figured adding a bit of jam to a French 75 (which contains champagne) would make the drink more English, and breakfast themed.
This drink can easily be prepared the morning of, but I suggest prepping you rhubarb simple syrup ASAP, as the flavor gets stronger time. I leave the rhubarb in my syrup to sit, and strain when it's time to serve.
A Strawberry & Rhubarb French 75
1.5 oz gin
.5 oz rhubarb simple syrup (ideally, make this a few days in advance)
1 tsp strawberry jam
2 oz lemon juice
splash of champagne or prosecco
Put gin, rhubarb simple syrup, jam, and lemon juice in a cocktail shaker with ice. Shake for a few minute. Double strain into glass (jam will have seeds). Top with prosecco or champagne.
Place thin slices of rhubarb in ice water for a few minute. Wrap around finger and then put back in the ice water. After a few minutes, drape on the site of the glass.
