I got to give this one up to my mom, because she is the brilliant lady who thinks to do thinks like cure salmon with my citrus vodka. I highly recommend using Faber Citrus Vodka, because the salmon came out so lemony - my entire family was impressed.
Faber is a PA brand, naturally made with no additives, and all of their bottles are $15.00 - damn good deal. Plus, as I said, I can't believe how lemony the salmon was!
1 LB piece of wild, center-cut salmon
1 bunch fresh dill
1/3 cup sugar
1/3 cup salt
1/4 cup Faber citrus vodka
Pour the vodka over the salmon, top with dill. Mix salt and sugar together and completely cover salmon with mixture. Cover tightly with plastic wrap and put a heavy weight on salmon (like a large can of tomato sauce). Refrigerate for 2 - 3 days. Remove dill and cut thinly on the diagonal bias.
